Bolo de Chocolate e Menta || Choco-Mint Cake

Uma daquelas combinações inegáveis...

One of those undeniable combinations...

Ingredientes:

(bolo)
6 ovos
300g de açúcar
250g de farinha 
1 colher (chá) de fermento em pó
225g de óleo vegetal
225g de leite
200g de chocolate em pó

(recheio)
200g chocolate de menta (tipo "After-Eight")
100g chocolate
200g natas

(cobertura e decoração)
200g manteiga sem sal
200g açúcar em pó
Corante verde q.b.
Aroma de menta q.b.
Raspas de chocolate q.b.
Chocolate de Menta q.b.


Ingredients:
(cake) 6 eggs, 300g white sugar, 250g all-purpose flour, 1 tspoon baking powder, 225g vegetable oil, 225g whole milk, 200g chocolate powder
(filling) 200g mint chocolate (as "After-Eight"), 100g chocolate, 200g heavy cream
(frosting and decor) 200g unsalted butter room temperature, 200g powdered sugar, green food colouring as needed, mint flavouring as needed, chocolate shavings for decoration, Mint Chocolates for decoration

Preparação:
(bolo)
Pré-aqueça o forno a 160ºC.
Unte e forre com papel vegetal duas formas de 20cm de diâmetro.
Numa taça grande, coloque todos os ingredientes e bata tudo junto, até estar uniforme.
Divida pelas formas e leve ao forno por cerca de 40 minutos.
Retire e deixe arrefecer.

(recheio) 
Prepare a ganache de chocolate fervendo as natas e vertendo sobre os chocolates em pedaços. Deixe repousar uns momentos e mexa bem até dissolver o chocolate e obter um creme liso e brilhante. 
Refrigere até estar mais firme e bata até obter uma textura cremosa como mousse.

(cobertura)
Bata a manteiga à temperatura ambiente com o açúcar em pó, corando e aromatizando a gosto.

(montagem)
Corte os bolos em anéis finos. 
Disponha o primeiro anel no prato. Coloque sobre ele uma porção do recheio. 
Coloque o segundo anel de bolo sobre o recheio. Sobre ele, uma nova porção de recheio e alguns pequenos pedaços de chocolate de menta para lhe conferir um toque crocante.
Repita o processo dos anéis de bolo e de recheio, intercalando um anel com e um sem pedaços de chocolate, terminando com um anel de bolo. 
Refrigere para estabilizar.
Retire do frio e cubra o bolo com uma primeira camada fina de cobertura, para colar as migalhas. Refrigere novamente até solidificar.
Retire do frio, cubra com mais creme de cobertura, alise bem (pode usar um alisador decorativo para obter riscas, por exemplo).
Cole raspas de chocolate na base do bolo e leve ao frio para solidificar.
Num saco pasteleiro, junte os restantes cremes de cobertura e recheio, para obter um efeito mármore. 
Decore os rebordos do bolo com este creme e pedaços de chocolates de menta.
Refrigere.
Sirva fresco, retirando do frio cerca de 1h antes de servir.



Method:

(cake)
Preheat the oven to 180ºC.
Grease and wrap two 20cm diameter baking pans with parchment paper.
In a large bowl, put all ingredients together and whisk everything together until smooth.
Divide in the pans  and bake for about 40 minutes.
Remove and let cool.

(filling)
Prepare the chocolate ganache by boiling the cream and pouring it over the chocolate pieces. Let it rest for a few moments and stir well until the chocolate dissolves and you get a smooth and shiny cream.
Refrigerate until firm and whisk until you get a creamy, mousse-like texture.

(frosting)
Whisk the butter at room temperature whit the powdered sugar, colouring and flavouring as you like.

(assemble)
Cut the cakes into thin layers.
Arrange the first layer on the plate. Place a portion of the filling on it.
Place the second cake layer over the filling. On top of it, a new portion of filling and a few small pieces of mint chocolate to give it a crunchy touch.
Repeat the process of the cake layers and filling, alternating one ring with and one without chocolate pieces, ending with a cake ring.
Refrigerate to stabilize.
Remove from the cold and cover the cake with a first thin layer of frosting, to crumb-coat. Refrigerate again until solidified.
Remove from the cold, cover with more frosting, smooth it out (you can use a decorative scrapper to get streaks, for example).
Place some chocolate shavings on the base of the cake and refrigerate to solidify.
In a pastry bag, combine the remaining frosting and filling, to obtain a marble effect. Decorate the edges of the cake with this  and some mint chocolate pieces.
Refrigerate.
Serve cool, removing from the fridge about 1 hour before serving.
