Entremet de Chocolate Negro || Dark Chocolate Entremet

Os dias de Verão e calor parecem ter terminado. Para nos despedirmos deles, nada melhor que conciliar o sabor quente do Chocolate Negro à temperatura refrescante de um entremet. 
O entremet, para além de bonito, torna-se delicioso, com as suas camadas de biscuit, mousse de chocolate negro e cobertura brilhante. Vai perder esta oportunidade de brilhar?

The summer days and the heat seem to be over. To say goodbye to them, nothing better than reconcile the hot taste of Dark Chocolate to the refreshing temperature of an entremet.
The entremet, in addition to its beauty, becomes delicious with its layers of biscuit, dark chocolate mousse and shiny cover. Are you going to miss this opportunity to shine?



Ingredientes:
(biscuit joconde de chocolate)
  • 60g de farinha de amêndoa
  • 50g de açúcar em pó
  • 20g de farinha
  • 20g de cacau em pó
  • 2 ovos
  • 2 claras
  • 20g de açúcar branco
  • 20g de manteiga sem sal, derretida
(mousse de chocolate negro)

  • 200g de leite condensado
  • 400g de chocolate negro
  • 400g de natas para bater
  • 18g de gelatina em pó
(glaçagem negra)

  • 240g de natas
  • 290g de água
  • 360g de açúcar branco
  • 120g de cacau em pó
  • 12g de gelatina em pó
(glaçagem rosa)

  • 50g de açúcar
  • 50g de glucose
  • 50g de chocolate branco
  • 25g de água
  • 33g de leite condensado
  • 1 colher (chá) de gelatina em pó + 20g de água
  • Corante Alimentar em gel rosa
(montagem)

  • Flores comestíveis
  • Folhas de Hortelã
  • Frutas Variadas
  • 50g de chocolate branco
  • Corante Alimentar em pó dourado


Ingredients:
(chocolate biscuit joconde) 60g almond flour, 50g confectioners sugar, 20g all-purpose flour, 20g cocoa powder, 2 eggs, 2 egg whites, 20g white sugar, 20g unsalted butter melted
(dark chocolate mousse) 200g sweetened condensed milk, 400g dark chocolate, 400g whipping cream, 18g neutral powdered gelatin
(dark chocolate mirroir glaze) 240g heavy cream, 290g water, 360g white sugar, 120g cocoa powder, 12g neutral powdered gelatin
(pink mirroir glaze) 50g white sugar, 50g glucose, 50g white chocolate, 25g water, 33g sweetened condensed milk, 1 tspoon neutral powdered gelatin + 20g water, edible pink food colouring
(assemble) edible fresh flowers, Peppermint Leaves, Fruits, 50g white chocolate, Edible Gold Dust Colouring



Preparação:

Comece por preparar o biscuit joconde.
Pré-aqueça o forno a 200ºC.
Unte e forre com papel vegetal um aro de 28cm de diâmetro. Reserve.
Bata as claras em castelo e adicione o açúcar branco aos poucos, batendo até obter um merengue firme e brilhante.
À parte, bata os ovos e junte a farinha de amêndoa, a farinha, o cacau e o açúcar em pó.
Junte, por fim, a manteiga derretida e bata até obter uma massa homogénea.
Envolva as claras e verta no tabuleiro previamente preparado.
Leve ao forno por 5 minutos, ou até começar a dourar.
Retire do forno, desenforme e coloque num aro limpo, forrado com película aderente. Reserve.

Entretanto prepare a mousse de chocolate negro.
Comece por hidratar a gelatina em água e derreter no micro-ondas.
Numa taça, junte o leite condensado e o chocolate negro derretido. Adicione a gelatina derretida e mexa bem.
Bata as natas em chantilly bem firme e envolva ao preparado anterior.
Coloque o semifrio no aro com a base de bolo previamente posicionada e leve ao congelador por, no mínimo, 6 horas, até estar bem firme.

Prepare a glaçagem negra.
Hidrate a gelatina cobrindo apenas o suficiente com água.
Num tacho, leve ao lume as natas e a água até atingirem uma temperatura aproximada de 50ºC.
Junte às natas o cacau e o açúcar e deixe ferver até “napar” (quando uma colher é mergulhada no preparado, fica coberta com o mesmo sem escorrer).
Retire do lume, junte a gelatina e mexa para uniformizar.
Reserve até o mesmo baixar a temperatura para 35ºC.

E por fim, a glaçagem rosa.
Hidrate a gelatina nas 20g de água.
Coloque numa taça, de inox ou vidro resistente ao calor, a gelatina previamente hidratada e o chocolate branco partido em pequenos pedaços. Reserve.
Num tacho, leve ao lume o leite condensado, o açúcar, a glucose e as 25g de água. Deixe aquecer até ferver. Mal ferva em bolhas largas, retire do lume e verta sobre o chocolate.
Bata com a varinha mágica ou batedeira até uniformizar o creme. Junte o corante rosa ao glaceado e uniformize a cor. Reserve até o mesmo baixar a temperatura para 35ºC.

Para montar, comece por fazer a telha de chocolate branco.
Derreta o chocolate e verta sobre uma folha de papel vegetal. Deixe secar ligeiramente e quando já não fluir, dobre o papel vegetal em leque e deixe solidificar. Pincele corante dourado em pó sobre o mesmo até dourar. 
Coloque o entremet sobre uma grelha ou um copo largo, centrado no meio do mesmo, posicionado sobre um tabuleiro.
Verta generosamente o glaceado de chocolate negro sobre o entremet, cobrindo-o na totalidade.
Deixe escorrer durante algum tempo até parar de pingar.
Com a ajuda de um saco pasteleiro, “risque” o entremet com o glaceado rosa. Deixe escorrer até parar de pingar.
Com a ajuda de uma espátula, raspe os rebordos inferiores para retirar qualquer excedente, e retire o entremet da grelha, posicionando-o num prato de servir.
Decore com as flores e as frutas intercalados com a telha de chocolate branco.
Salpique com corante em pó dourado.

Method:
Start by preparing the biscuit joconde.
Preheat the oven to 200ºC.
Grease and wrap with parchment paper, a 28cm diameter stainless steel cake ring. Set aside.
Whisk the egg whites and add the white sugar gradually, whisking until obtaining a firm and shiny meringue.
Apart, whisk the eggs and add the almond flour, flour, cocoa and powdered sugar.
Finally, add the melted butter and beat until homogeneous.
Fold in the egg whites and pour into the previously prepared cake ring.
Bake for 5 minutes or until golden brown.
Remove from the oven, unmold and place on a clean ring, wrapped with adherent film. Set aside.

Meanwhile prepare the dark chocolate mousse.
Start by moisturizing the gelatin in water and melting it in the microwave.
In a bowl, combine condensed milk and melted black chocolate. Add the melted gelatin and stir well.
Whip the cream into a whipped cream and wrap the previous chocolate mix.
Place it on the cake ring with the previously placed cake base and freeze it for at least 6 hours until firm.

Prepare the dark chocolate mirroir glaze.
Hydrate the gelatin by covering it with just enough water.
In a pan, heat the cream and water until reaching a temperature of approximately 50ºC.
Add the cocoa and the sugar to the cream and boil until it covers the back of a spoon (when a spoon is dipped in the glaze, it is covered with it without draining).
Remove from the heat, add the gelatin and stir to combine.
Reserve until the same lower the temperature to 35ºC.

And finally, the pink mirroir glaze.
Hydrate gelatin in 20g of water.
Place the previously hydrated gelatin and the white chocolate broken into small pieces in a stainless steel or heat resistant glass. Set aside.
In a pot, heat the condensed milk, sugar, glucose and 25g of water. Let it heat until it boils. Barely boil in large bubbles, remove from the heat and pour over the chocolate.
Mix it until smooth. Add the pink colouring to the glaze. Set aside until it lower the temperature to 35ºC.

To assemble, start by making the white chocolate sail.
Melt the chocolate and pour it over a sheet of parchment paper. Let it dry slightly and when it no longer flows, fold the paper and let it solidify. Brush golden powder on it until golden.
Place the entremet on a grill or a large glass, centered in the middle of it, positioned on a tray.
Generously pour the dark chocolate glaze over the entremet, covering it completely.
Let it drain for some time until it stops dripping.
With the aid of a pastry bag, "scratch" the entremet with the pink glaze. Let it drain until it stops dripping.
Using a spatula, scrape the bottom edges to remove any excess, and remove the entremet from the grill by positioning it on a serving dish.
Decorate with flowers and fruits interspersed with white chocolate sail.
Sprinkle with golden powder food colouring.
